Chicken Chili



20 oz chicken breasts, cubed
1 med onion, chopped
1 tsp, each cumin, lemon pepper, & oregano
1/2 tsp garlic salt
2  - 14.4 oz cans chicken broth
2  - 15 oz cans pinto beans with jalapenos
2 - 11 oz cans white shoepeg corn
2 tsp chipolte chilis in adobo sauce chopped
2 bay leaves
2 tbl lime juice
2 tbl sugar
1/4 c fresh cilantro, chopped

1) Cube the Chicken and the Onion

Over medium heat
Melt 2 tbl butter in 6-qt. sauce pan.
Add cubed chicken.
Add chopped onion. (peel under cold running water!)
Add spice mix (not bay leaves).
Cook over medium heat until chicken is no longer pink (6-8 minutes).

Shoepeg White Corn

2) Pour the Good Life from the Can

Drain and rinse beans.
Add 2 cans broth
Add 2 cans bean
Add 2 cans shoepeg corn
Add 2-3 tsp chipolte chiles/adobo sauce
Add 2 bay leaves
Continue cooking until mixture comes to a boil (8-10 min).
Reduce heat to low.
Cook uncovered, 30 minutes.

3) Just Before Serving

Remove bay leaves
Stir in lime juice, sugar and cilantro.
Serve with chopped red pepper and lime wedges if desired.

Just add 1 onion, 2 limes and
20 oz of chicken breast.
